After whole-cluster pressing using a Scharfenberger pneumatic press, fermentation took place in second-fill Chassin and Boutes Soleil barrels, as well as an older, repeatedly used 228L Louis Latour barrel. Fermentation started well, then slowed somewhat and, after a topping up, continued mostly under the yeast film until October 2023.
