The grapes are harvested from the middle section of the steep vineyard, on lighter soils with less-stressed vines. In this part, harvesting takes place in a second stage at medium ripeness, following Ex Vero I from the lower slopes. After hand-harvesting, the grapes are gently whole-cluster pressed and aged on fine lees in large, used Alsatian-style barrels for at least 22 months. Bottled unfiltered, unfined, and without added sulfur.
