The grapes come from 10–16-year-old vines planted in terraced vineyards. They are hand-harvested and destemmed, then gently pressed into old barrels of 300, 1,800, and 2,000 liters, where fermentation occurs spontaneously with the native yeast flora. The wine then matures in these vessels for 18–24 months.\u003c\/p\u003e\n\u003cp data-start=\"651\" data-end=\"950\"\u003eDue to challenging weather conditions and a significant drop in cellar temperatures, fermentation temporarily halted. The wine therefore remained in wooden barrels for an additional 12 months while waiting for fermentation to resume.
