He currently farms almost 4 hectares, where the spotlight is mainly on Chenin, but there is also a smaller Grolleau and a Cabernet Franc plantation.\u003c\/p\u003e\n\n\u003cp\u003e In the cellar, Thomas' guiding principle is \"zero-zero\", meaning there is no place for added ingredients, only perfect and mature raw materials. Fermentation and maturation take place in 500l used barrels, then Thomas transfers the wine to steel tanks for a few months before bottling.
