They are then confronted with the damage that the conventional cultivation, which was enough for their father to sell the grapes locally, has caused to the outstanding estate. By founding Clos Lentiscus, they set out to restore the estate to its former glory and continue the traditional and nature-oriented work of their ancestors.\u003c\/p\u003e\n\n \u003cp\u003eThe estate is located in Sant Pere de Ribes, very close to Sitges, at an altitude of 225m above sea level. The peaks of the Garraf Mountains dominate the landscape to the north-east, while the Mediterranean Sea dominates to the south. The winery sits on a limestone bedrock, and the thin soil near the surface is rich in marine sediment. The proximity of the sea and the special soil contribute to the unique, mineral character of the wines.\u003c\/p\u003e\n\n\u003cp\u003e Clos Lentiscus cultivates its vineyards according to biodynamic methods, without the use of chemicals. The grapes grown are all local varieties: Malvasia de Sitges, Xarel.lo, Sumoll, Parellada, Cartoixà Vermell, Carignan and Ull de llebre.\u003c\/p\u003e\n\n\u003cp\u003e In the cellar, we can experience a similar approach as in the vineyard: minimal intervention, which is reflected in spontaneous fermentation, the omission of filtration and clarification, and the very limited use of sulfur.\u003c\/p\u003e\n\n \u003cp\u003eIn addition to the still wines, we must also mention the cavas, from which Manuel got his nickname.
